For nearly a hundred years, one green spirit was blamed for madness, seizures, and hallucinations that drove artists to cut off their own ears. Then chemists opened sealed bottles that predated the ban and measured what was actually inside. The villain barely showed up.
What the evidence supports: Absinthe is a very high-proof spirit — usually 45–74% alcohol by volume. The wreckage attributed to it in the 1800s tracks with heavy drinking, and in cheaper bottles, with genuinely toxic adulterants that shady producers added for color and cloudiness.
What's overstated or unsupported: The idea that thujone, the compound in wormwood, made absinthe hallucinogenic or uniquely dangerous. When researchers analyzed vintage pre-ban absinthe, thujone came in far lower than a century of legend had claimed — right in the range of today's legal product.

Absinthe's fall was a moral panic wearing a lab coat. The spirit was invented in the Swiss canton of Neuchâtel in the late 18th century and became a French obsession in the 1800s, especially after the phylloxera insect wiped out much of Europe's vineyards in the 1860s and 70s. With wine scarce and expensive, cheap absinthe filled the glasses of Paris. By the early 1900s France was drinking tens of millions of liters a year, and the emptying cafés at dusk had a name: l'heure verte, the green hour.
As consumption exploded, so did the backlash. Doctors described a syndrome they called “absinthism” — addiction, tremors, seizures, hallucinations — and pinned it on wormwood rather than the alcohol. The 1905 case of Jean Lanfray, a Swiss laborer who murdered his family, became the rallying cry. He had drunk two glasses of absinthe that day. He had also downed wine, brandy, and more through a heavy-drinking morning, but it was the absinthe that made headlines and fed an 82,000-signature petition.
The bans arrived in a wave: Belgium in 1905, the Netherlands in 1909, Switzerland's constitutional ban taking effect in 1910, the United States in 1912, and finally France — absinthe's spiritual home — in 1915, pushed over the line by wartime anxiety and a wine lobby eager to bury a competitor. Italy followed in 1932. The temperance movement, the recovering wine industry, and a world war did more to kill absinthe than any chemical ever did.
The central claim never survived measurement. Thujone is a real compound, and at high enough doses it does something: the Berkeley toxicology group led by John Casida showed in a 2000 study in PNAS that alpha-thujone blocks the GABA-A receptor and can trigger convulsions in mice. But two things undercut the horror story. Thujone shows no hallucinogenic activity at any dose, and the body clears it fast — cytochrome P450 enzymes break it down into less toxic metabolites almost as quickly as it arrives.
Then came the bottles. A team analyzing thirteen authentic pre-ban absinthes (all bottled before 1915) found total thujone ranging from 0.5 to 48.3 mg/L, averaging about 25 mg/L. That is not the poison of legend — it sits squarely within what modern absinthes and today's legal limits allow. The long-repeated notion that old absinthe was dramatically more “loaded” than the modern stuff simply wasn't true.
A 2006 review pointedly titled “Absinthism: a fictitious 19th century syndrome” reached the blunt conclusion the field now largely accepts: the 19th-century evidence can't separate “absinthism” from ordinary chronic alcoholism, and nothing but ethanol in the drink adequately explains the damage. Even a controlled human trial on thujone and attention found only a modest effect from a high-thujone drink versus alcohol alone — and no one started seeing things.
Yes, it's legal in most of the world, and the way you serve it matters more than any myth. In the United States, absinthe returned in 2007 when the TTB clarified that a product counts as “thujone-free” — and therefore sellable — if it contains less than 10 mg/kg of thujone, a threshold set by the detection limit of the test rather than by any danger point. The European Union allows up to 35 mg/kg in wormwood spirits. Switzerland re-legalized it in 2005, and France, which never quite repealed the 1915 law cleanly, finally cleared it in 2011.
The traditional serve is built to tame the proof. Pour a measure over ice-cold water at roughly three to five parts water to one part absinthe, dripped slowly, ideally over a sugar cube on a slotted spoon if you want a touch of sweetness. The spirit turns cloudy — the louche — as the herbal oils come out of solution. Skip the flaming-sugar-cube routine; that's a 1990s marketing gimmick, not a French tradition, and it mostly just burns off aromatics.
When buying, the quality signal isn't the color. Look for absinthe made by genuine distillation rather than cold-mixed from essences, and be suspicious of anything a lurid neon green, which usually means artificial dye. And treat it like the strong drink it is: at 60-plus percent alcohol, a couple of properly diluted glasses is plenty.
Mainstream scientific view. Forensic toxicologists and food chemists have reached a settled position: the harms of absinthe are the harms of alcohol, amplified historically by adulterants like copper salts and antimony in cheap knockoffs. The peer-reviewed record — from Casida's receptor work to the vintage-bottle analyses — treats the thujone scare as debunked.
Alternative and integrative view. Herbalists have used wormwood (Artemisia absinthium) for centuries as a bitter digestive tonic and a traditional remedy for intestinal parasites, long before it ever flavored a spirit. Proponents point to preliminary research on wormwood extracts for digestion and inflammation. That's a fair conversation about the plant — but it's separate from the spirit, and the doses studied bear no relationship to what's in a diluted glass of absinthe.
Influencer and public view. The “green fairy” mystique never really died. Popular TikTok and YouTube creators still describe absinthe as mildly psychedelic or hallucinogenic, often while performing the fire ritual for the camera. Pushing the other way are educators and enthusiast groups like the Wormwood Society, who spend a lot of energy correcting the record and steering drinkers toward well-made, properly distilled bottles. The myth sells; the correction is less viral.
The uncomfortable twist is that the myth now helps sell the product it once destroyed. Some modern brands lean hard into “high-thujone” or “hallucinogenic” language precisely because it moves bottles — resurrecting a scare that the science dismantled. Strip that away and the picture is consistent: the real culprits behind absinthe's dark 19th-century reputation were its very high alcohol content, toxic additives in unregulated cheap versions, and a political climate primed to find a scapegoat.
One honest caveat keeps the story from getting too tidy. A 1992 study noted that terpenes including thujone can worsen porphyria, a rare metabolic condition, which fed longstanding speculation about Vincent van Gogh's illness. That's a real biochemical effect in a susceptible minority — not evidence that absinthe drove healthy drinkers mad. The line between evidence and marketing runs right through the word “hallucinogenic”: no rigorous study has ever shown absinthe causes hallucinations at drinkable doses.
A few open threads remain. Better analytical baselines across a wider set of vintage and craft bottles would close the book on the pre-ban-versus-modern debate for good; the pharmacology of thujone at genuinely realistic dietary doses (as opposed to injected mouse studies) deserves more human data; and regulators could still harmonize the patchwork of thujone limits that make the same bottle legal in Prague and seizable at a U.S. port.
